The bell concert in the belltower at around 5pm (can't remember exact time) was very nice. Otherwise, just enjoy walking around the city.

take the map at the reception, nice cheap places there (like Medard for the 3 euros spag). The choco bar is AMAZING if you like chocolate but a little bit expensive (almost 4 euros for hot chocolate and 12 euros for a plate of chicken that is amazing wich comes with a free bag of truffles!)

Bruges is very expensive to eat it. I found little by way of reasonable eating outside of buying from the grocery stores and french fries.

Try just outside the hostel, they my not be the most cheap, but for a main course only the rice is very good and the food is excellent, plus you get the feel of spending your evening with the locals.
